Once nuts have been ground, add dried dates, apricots, vanilla extract, maple syrup, shredded carrots and sea salt. Blend in food processor to combine until a thick paste is formed.
After the batter is formed, roll into golf ball size balls and set aside.
Add shredded coconut to a small bowl and add rolled balls to the shredded coconut one at a time and toss to coat. Enjoy
