Homemade Superseed Granola

Crunchy, nutty, and just the right amount of sweet — homemade seeded granola is the snack that does it all! Packed with oats, nuts, pumpkin, hemp, flax, and whatever else you’ve got hiding in the pantry, this golden goodness is toasted to perfection and totally customizable. Sprinkle it on yogurt, eat it by the handful, or gift it in a cute jar and look like a breakfast genius. Warning: may cause spontaneous granola addiction.

Directions:

  1. Preheat the oven to 300 degrees F. Line a large baking sheet with parchment paper.
  2. In a large bowl, stir together oats, oat flour, flaxseed meal, cinnamon, salt, cashews, pecans, walnuts, pumpkin seeds, sliced almonds, hemp seeds, and coconut flakes. Set aside.
  3. Next, add coconut oil, maple syrup, and vanilla extract to a small saucepan and place over low heat, stirring frequently until the coconut oil is completely melted. Pour over the dry ingredients and mix well until oats are completely coated.
  4. Spread the granola on the baking sheet in an even layer and press down using a spatula. Bake for 35-40 minutes until golden brown and fragrant. Once done, remove from the oven and allow the granola to cool on the baking sheet for 1-=15 minutes before you break it into large clumps.
  5. Transfer to an airtight container or large mason jar. Makes 14-16 servings.

  • 1/2 cup Walnuts
  • 1/2 cup Pumpkin Seeds
  • 1/2 cup Slivered Almonds
  • 1/2 cup Hemp Seeds
  • 1 cup Unsweetened Coconut Flakes
  • 1/3 cup Coconut Oil
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla Extract
